Industrial freezing, cooling and pasteurisation of food

The speed of freezing decides what the product will be like once thawed. A slowly frozen product loses texture and water. Heinen Freezing supplies spiral and fluidised bed systems for freezing, cooling, pasteurisation and fermentation.

PROCESSES

Six processes, individually or in sequence

The systems are chosen according to the product and to whether a single process or a whole line is required, for example fermentation then freezing, or pasteurisation then freezing.

Freezing

Spiral or fluidised bed, depending on whether the product is piece goods or bulk.

Cooling

Active cooling with climate control, or cooling with ambient air.

Cooling and freezing

Both processes in one unit, without intermediate storage.

Pasteurisation

A warm spiral system with dry or moist air and precise climate control.

Fermentation

A spiral proofer with matched resting, proving and cooling phases.

Pasteurisation and freezing

A linked line for products requiring heat treatment before freezing.

Spiral systems for piece goods

The most versatile is arctic®: it cools and freezes all kinds of food products, in a single- or twin-drum version, with different belt widths and tier spacings. For a production start-up or for specialities there are compact® and compact® duo, with the same experience drawn from large plants but on the smallest possible footprint.

Fluidised bed systems for bulk products

blizzard freezes quickly but gently, first in the pre-freezing zone and then in the main zone, for diced meat, shrimp, shellfish, peas, vegetables, chips and berries, up to 15 t/h. For small and medium plants there is freezelite®, a modular solution in three belt widths and seven capacities.

For the bakery industry

The spiral proofer with climate control and long retention times is proofline®, one of the most widely used systems in industrial bakery production. Baked goods are actively cooled by acticool®, with climate control, while ambicol® is the basic version for conveying and cooling with ambient air.

For packed goods and heat treatment

The largest system in the programme is packfrost®, a modular multi-tier freezer for goods packed in cartons or plastic crates, in two widths and with a variable number of tiers. For pasteurisation there is pasturic®, a warm spiral system in a single- or twin-tower version.

Alongside the above we also supply all conveying equipment, silos, bins, cyclones, filters, vibrating screens, electrical equipment and more.

DESIGN

What sets these systems apart

Up to 144 hours of uninterrupted operation. Sequential defrosting with hot gas, brine or electric heaters keeps production continuous.

Stainless steel inside. Wall and ceiling panels clad in stainless steel, the floor built as a fully welded tub with defined drains.

Adaptation to the product. Stainless steel or plastic belts, variable air flow and frequency-controlled belt shaking.

Pre-assembled modules. Fast installation and integration into practically any production line layout, on the floor, on a foundation or on a frame.

Belt washing. A basic system with a foam pump, upgradable to washing the entire interior of the unit.

Control. A PLC with recipes, temperature trend display and a 3D view of the system on a colour touchscreen.
